Try this twist on classic waffles made with buckwheat flour. Buckwheat is the seed of a plant related to rhubarb and is prized as a flour for its complex, nutty flavor. These waffles cook up light and crispy and are naturally gluten-free! Paired with honey butter, this may just become your new go-to waffle recipe.

Ingredients:

  • 1 1/2 cups buckwheat flour
  • 1/4 cup ground flaxseed meal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted and cooled
  • HONEY BUTTER:
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup honey
  • 1/2 teaspoon sea salt
  • OPTIONAL:
  • Whipped cream

Directions:

  1. In a medium bowl, whisk flour, flaxseed meal, baking powder, baking soda, sugar, and salt.
  2. Whisk in eggs, milk, sour cream, and vanilla until smooth. Stir in melted butter and let sit at least 15 minutes before cooking. (See Cook’s Tips)
  3. Make Honey Butter: In a small saucepan, melt butter on low heat. Add honey and salt. Stir until well combined. Keep warm until ready to serve, stirring occasionally to keep from separating.
  4. Cook waffles in waffle iron, according to manufacturer's instructions, until golden brown on both sides. Repeat with remaining batter. (See Cook's Tips)
  5. Drizzle with honey butter and serve with whipped cream, if desired.

  7. Since buckwheat flour does not contain gluten, the flaxseed acts as a binder. It must be allowed to hydrate at least 15 minutes to work properly.
  8. Buckwheat flour is naturally grey in color making it slightly difficult to determine doneness by appearance. Taste and adjust cook time according to your crispiness preference.
  9. Keep waffles warm in 200°F oven, arranged on a rack set within a rimmed baking sheet, to stay crisp.
