Our meat department has everything you need to master mealtime, whether it’s getting a quick healthy dinner on the table or throwing down for an outdoor grilling party. We bring in the highest quality and best tasting meat we can find and you’ll meet only experienced, friendly, helpful folks behind our counters.

REAL BUTCHERS

When it comes to handling meat, our butchers are the real deal. Our managers average more than 20 years of experience, so they have expert knowledge of every item behind that counter. Even the new butchers get a nose‑to‑tail education in butchery, a practice that’s rare to find in other grocery stores.

FULL-SERVICE SHOP

From slicing to grinding, it’s all happening less than 50 feet from where you grab the meat and put in your basket. Not only is each one of our stores operating a full‑service butcher shop, but they are also crafting restaurant-quality ready‑to‑cook meal options, including burger patties, kabobs, meatloaves, and more, all with fresh in‑season ingredients.


Preparation Instructions for Butcher Shop Favorites:


Chicken Breast Parmesan

1. Preheat oven to 450°F.

2. Heat 1/2 inch olive oil in a large, oven-safe skillet over medium-high heat until it begins to shimmer. Add chicken and cook until golden, about 2 minutes per side.

3. Transfer skillet to oven and cook 15 to 20 minutes. A probe thermometer inserted into the center should read at least 165°F.

4. Optional: During last 5 minutes in oven, top with Metropolitan Market Marinara and Hand-Stretched Mozzarella cheese, cooking until cheese is browned and bubbly.

5. Serve with your choice of Metropolitan Market Pastas.


Flank Steak with Kalbi Marinade

1. Preheat grill to medium high heat or oven to broil.

2. Grill/broil flank steak 3 to 4 minutes per side until desired doneness is achieved.

  • Rare: 125°F
  • Medium Rare: 135°F
  • Medium: 145°F
  • Medium Well: 150°F
  • Well Done: 160°F

4. Remove from heat and let rest 5 minutes.

5. Slice thinly across the grain and serve.


Pork Wiener Schnitzel

1. Preheat oven to 450°F.

2. Heat 1/2 inch olive oil in a large, oven-safe skillet on medium-high heat until it begins to shimmer. Add pork and cook until golden, about 2 minutes per side.

3. Transfer skillet to oven and cook 12 to 15 minutes. A probe thermometer inserted into the center should read at least 160°F.

4. Remove from heat and let rest 3 minutes before serving.


Chicken Souvlaki Skewers

1. Preheat grill to medium-high heat or oven to broil.

2. Grill/broil chicken skewers about 20 minutes, turning every 3 to 4 minutes, until done. A probe thermometer inserted into the center should read at least 165°F.

3. Remove from heat and serve.
