4-Ingredient Fruit Leather

MAKES 24 STRIPS
These homemade fruit roll-ups are easy to make and fun to eat. They're great for packing in lunch boxes and taking on hikes.

Ingredients

  • 1 pound plums, pluots, or apricots (pits removed and rough chopped (3 cups))
  • 2 tablespoons honey (plus more to taste)
  • 1 teaspoon vanilla bean paste
  • Pinch of kosher salt

Directions

  1. Preheat oven to 170°F (140°F, if your oven allows). Line a rimmed baking sheet with parchment paper. Set aside.
  2. Place all ingredients in blender and puree until smooth. Taste and add more honey, to preference.
  3. Pour mixture into prepared pan. Spread evenly into a thin layer.
  4. Dehydrate in oven until no longer wet, about 6 to 8 hours. Surface will still be slightly tacky.
  5. Allow to cool fully. Cut fruit leather, with parchment paper attached, into 1-inch wide strips. Roll up and store in an airtight container.

Cook Tips

If fruit is not fully ripe, roast on a lined baking sheet at 350°F for 15 to 20 minutes to soften and bring out its sweetness.
