4-Ingredient Fruit Leather
MAKES 24 STRIPS
These homemade fruit roll-ups are easy to make and fun to eat. They're great for packing in lunch boxes and taking on hikes.
Ingredients
- 1 pound plums, pluots, or apricots (pits removed and rough chopped (3 cups))
- 2 tablespoons honey (plus more to taste)
- 1 teaspoon vanilla bean paste
- Pinch of kosher salt

Directions
- Preheat oven to 170°F (140°F, if your oven allows). Line a rimmed baking sheet with parchment paper. Set aside.
- Place all ingredients in blender and puree until smooth. Taste and add more honey, to preference.
- Pour mixture into prepared pan. Spread evenly into a thin layer.
- Dehydrate in oven until no longer wet, about 6 to 8 hours. Surface will still be slightly tacky.
- Allow to cool fully. Cut fruit leather, with parchment paper attached, into 1-inch wide strips. Roll up and store in an airtight container.
Cook Tips
If fruit is not fully ripe, roast on a lined baking sheet at 350°F for 15 to 20 minutes to soften and bring out its sweetness.
