4-Ingredient Lemon Curd
MAKES ABOUT 2 CUPS
Lemon curd is creamy, luscious, and easy to make. Use it to fill tarts, spread on scones, stir into yogurt, or top layers of meringue in a delicious, pillowy pavlova.
Ingredients
- 4 large egg yolks
- 4 lemons (zested and juiced)
- 3/4 cup granulated sugar
- 11 tablespoons unsalted butter (cut into cubes)
Directions
- Add everything to a small, heavy-bottomed sauce pan. Whisk together.
- Cook on medium-low heat, stirring constantly with a whisk. Don't stop! Once the mixture begins to bubble and thickens enough to coat the back of a spoon, remove from heat.
- Pass mixture through a fine mesh strainer into a bowl. Cool, stirring occasionally. Transfer to a jar (or two). Cover and cool completely before refrigerating or serving.
