4-Ingredient Simple Thai Curry

Pick up pre-cut vegetables and chicken tenders to make this dish even quicker to prepare. Serve with rice or roti.

Ingredients

  • 1 tablespoon Thai curry paste
  • 1 (14 ounce) can coconut milk or coconut cream
  • 3/4 pound chicken tenders or pre-cut strips of chicken breast
  • 3/4 pound stir-fry vegetable mix

Directions

  1. In a deep skillet, heat a teaspoon of oil. Add curry paste. Sauté until fragrant.
  2. Whisk in coconut milk.
  3. Add chicken and vegetables. Cover and bring to simmer.
  4. Cook on low simmer 10 to 12 minutes or until chicken is cooked through and vegetables are tender.
