4-Ingredient Simple Thai Curry

Pick up pre-cut vegetables and chicken tenders to make this dish even quicker to prepare. Serve with rice or roti.
Ingredients
- 1 tablespoon Thai curry paste
- 1 (14 ounce) can coconut milk or coconut cream
- 3/4 pound chicken tenders or pre-cut strips of chicken breast
- 3/4 pound stir-fry vegetable mix
Directions
- In a deep skillet, heat a teaspoon of oil. Add curry paste. Sauté until fragrant.
- Whisk in coconut milk.
- Add chicken and vegetables. Cover and bring to simmer.
- Cook on low simmer 10 to 12 minutes or until chicken is cooked through and vegetables are tender.
