Aguachile de Ostión (Oyster)

The flavors of aguachile, usually made with shrimp, pair well with briny oysters for a new twist on a traditional Mexican favorite. If you are unsure about what type of oysters to get, ask our fishmongers for a seasonal recommendation—they are happy to shuck them for you, too!
Ingredients
- 12 small oysters (freshly shucked*)
- 6 tablespoons fresh lime juice (about 3 limes)
- 2 serrano peppers (thinly sliced)
- Kosher salt (to taste)
- 1/4 English cucumber (seeded and finely diced)
- 2 tablespoons finely minced red onion
Directions
- In a small bowl, combine lime juice and 3 serrano slices. Add salt, to taste. Marinate 20 minutes at room temperature.
- Spoon mixture over oysters. Sprinkle with cucumber and red onion. Top each with additional serrano slice.
