Brown Butter Cauliflower Rice

This low-carb rice replacement is easy to prepare, consisting of just two ingredients. Brown butter and caramelized cauliflower are the secret to unlocking this tasty side which does a great job soaking up saucy dishes.

Ingredients

  • 1 medium head cauliflower, riced (See Cook's Tips)
  • 6 tablespoons unsalted butter

Optional Ingredients

  • 1/4 cup nutritional yeast (it adds a cheesy, umami flavor boost.)

Directions

  1. In a large non-stick skillet, heat butter on medium-high heat until melted.
  2. Add cauliflower (and nutritional yeast, if using). Toss to coat everything evenly in butter.
  3. Cook, stirring occasionally, until cauliflower is evenly toasted to a light, golden brown, 3 to 5 minutes. Serve immediately.

Cook Tips

To prepare cauliflower: Slice thinly and pulse in a food processor until the size of rice. Pre-riced cauliflower is available for purchase from your produce department, but cutting your own yields a tastier result.

We kept this recipe unsalted to serve alongside flavorful sauces, stews, and stir-fried dishes as the perfect rice substitute. If you choose to add salt, do so sparingly and only at the very end of the cooking process. Otherwise, the salt will draw out liquid in the cauliflower, preventing it from browning properly.
