Cheddar and Chive Scones

These are not dry and crumbly hockey pucks, but that doesn’t mean you should skip eating them with a bit of creamy European-style butter for over-the-top deliciousness!

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped chives
  • 1 1/4 cups heavy whipping cream, plus more for brushing tops
  • 2 tablespoons grated Parmesan

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Stir in cheese and chives.
  3. Pour heavy cream over dry ingredients and mix with a fork.
  4. Scrape down sides of bowl and transfer sticky dough onto a lightly floured surface. Using clean hands, bring mixture together and knead a few times until fully combined, but do not overwork. Divide dough in half and pat into two disks about 4 inches in diameter and 1 1/2 inches thick.
  5. Brush the top of each disk with a little cream. Sprinkle with grated Parmesan. Cut each disk into 6 wedges and space evenly on prepared baking sheet.
  6. Bake 12 to 15 minutes or until tops are lightly browned.
