Cherry Clafoutis

Cherry Clafoutis

Serves 8
This classic French fruit and custard dessert is simply delicious. We love it still warm from the oven. Any leftovers make a great breakfast.

Ingredients

  • 1 pound cherries (about 2 cups) (pitted)
  • 1 cup whole milk
  • 3 large eggs
  • 1/3 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 6 tablespoons unsalted butter (melted)
  • 1/2 teaspoon almond or vanilla extract
  • 2 tablespoons coarse sparkliing sugar

Directions

  1. Preheat oven to 400°F. Butter a 9-inch deep-dish pie plate or 8 x 8-inch baking dish.
  2. Arrange cherries in a single layer in buttered baking dish.
  3. In a blender, combine milk, eggs, sugar, flour, salt, butter, and extract. Blend 30 seconds until well combined.
  4. Pour batter into pan over cherries. Sprinkle with sanding sugar and bake about 40 minutes or until puffed, golden brown, and toothpick inserted in center comes out clean.
  5. Let cool 20 minutes before serving. Refrigerate any leftovers for up to 2 days.
