Cherry Clafoutis
Serves 8
This classic French fruit and custard dessert is simply delicious. We love it still warm from the oven. Any leftovers make a great breakfast.
Ingredients
- 1 pound cherries (about 2 cups) (pitted)
- 1 cup whole milk
- 3 large eggs
- 1/3 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 6 tablespoons unsalted butter (melted)
- 1/2 teaspoon almond or vanilla extract
- 2 tablespoons coarse sparkliing sugar
Directions
- Preheat oven to 400°F. Butter a 9-inch deep-dish pie plate or 8 x 8-inch baking dish.
- Arrange cherries in a single layer in buttered baking dish.
- In a blender, combine milk, eggs, sugar, flour, salt, butter, and extract. Blend 30 seconds until well combined.
- Pour batter into pan over cherries. Sprinkle with sanding sugar and bake about 40 minutes or until puffed, golden brown, and toothpick inserted in center comes out clean.
- Let cool 20 minutes before serving. Refrigerate any leftovers for up to 2 days.
