Chilaquiles (Saucy Fried Tortillas)
Serves 6
Chilaquiles is a common Mexican brunch dish which comes in many regional forms. It's a great way to use up leftover chips and salsa.
Ingredients
- 1 (15 ounce) can refried beans
- 1 cup salsa verde (plus more to taste)
- 1 bag (about 6 cups) corn tortilla chips, See Cook's Tip
- 1/2 cup pickled red onions
- 1/4 cup crumbled cotija cheese
- 1/4 cup Mexican crema
- 1/4 cup chopped cilantro

- Fried large eggs
Directions
- Warm refried beans in microwave or on stovetop. Stir in a little water if too thick.
- Warm salsa in microwave or on stovetop. Some people choose to mix the salsa and chips together in a large pot on the stove to soften the chips; others choose to keep the chips crisp and pour the salsa on at the last minute.
- To serve, place a mound of chips on each plate with a spoonful of beans on the side. Pour warm salsa over chips if not already mixed together. Top with pickled red onions, cotija crumbles, a drizzle of crema, and chopped cilantro. Serve with a fried egg on top, if desired.
Cook Tips
If you have leftover corn tortillas, make your own chips by cutting them into quarters and either frying them in an inch of oil or brushing them lightly with oil and baking them in a single layer at 375°F for about 7 minutes per side.
