Coconut Rice
Serves 6
Fragrant and flavorful, coconut rice is the perfect accompaniment to curries and other spicy dishes that benefit from a cool sidekick.
Ingredients
- 2 cups long-grain rice
- 1 (14 ounce) can full-fat coconut milk
- 3 tablespoons unsweetened desiccated coconut
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt

- Toasted coconut
- Lime zest
Directions
- Rinse and drain rice 3 or 4 times to remove excess starch. Place rice in bowl and cover with 1-inch water. Soak 15 minutes. Drain.
- Place medium saucepan over medium heat. Open can of coconut milk; skim solid coconut fat from top of milk and place in pan to melt. Add drained rice and stir to coat with melted coconut fat.
- Slowly pour in coconut milk and 1/2 cup water. Add dried coconut, sugar, and salt. Stir to combine.
- Bring to a low boil and stir once. Cover, reduce heat, and simmer 15 minutes. Remove from heat and leave lid on. Allow to rest 10 minutes.
- Remove lid, fluff rice with fork, and adjust seasoning, as needed. Garnish with toasted coconut and lime zest.
