Coconut Rice

Coconut Rice

Serves 6
Fragrant and flavorful, coconut rice is the perfect accompaniment to curries and other spicy dishes that benefit from a cool sidekick.

Ingredients

  • 2 cups long-grain rice
  • 1 (14 ounce) can full-fat coconut milk
  • 3 tablespoons unsweetened desiccated coconut
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt

Optional Ingredients

  • Toasted coconut
  • Lime zest

Directions

  1. Rinse and drain rice 3 or 4 times to remove excess starch. Place rice in bowl and cover with 1-inch water. Soak 15 minutes. Drain.
  2. Place medium saucepan over medium heat. Open can of coconut milk; skim solid coconut fat from top of milk and place in pan to melt. Add drained rice and stir to coat with melted coconut fat.
  3. Slowly pour in coconut milk and 1/2 cup water. Add dried coconut, sugar, and salt. Stir to combine.
  4. Bring to a low boil and stir once. Cover, reduce heat, and simmer 15 minutes. Remove from heat and leave lid on. Allow to rest 10 minutes.
  5. Remove lid, fluff rice with fork, and adjust seasoning, as needed. Garnish with toasted coconut and lime zest.
