Cottage Cheese Pancakes

MAKES ABOUT 16 (4-INCH) PANCAKES
Cottage cheese pancakes are a delicious and protein-packed twist on traditional pancakes, with a fluffy texture and slightly tangy flavor that will make them a new breakfast favorite.

Ingredients

  • 4 large eggs
  • 1 cup small curd cottage cheese
  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 6 tablespoons unsalted butter (melted and cooled, plus more for cooking and serving)
  • 1 teaspoon vanilla extract or lemon zest
  • Warm maple syrup

Directions

  1. Break eggs into a medium bowl. Whisk to blend. Whisk in cottage cheese, flour, and sugar. Stir in melted butter and vanilla or lemon zest.
  2. Heat a large, non-stick griddle or skillet over medium heat. Add a pat of butter and swirl to coat bottom of pan. Pour 1/4 cup portions of batter into pan, allowing a little space between each pancake. Cook, turning once, until both sides of pancakes are golden.
  3. Serve immediately with butter and warm maple syrup.

Cook Tips

To keep pancakes warm while cooking remaining pancakes, place on a parchment-lined baking sheet and in a 200°F oven.
