Cottage Cheese Pancakes
MAKES ABOUT 16 (4-INCH) PANCAKES
Cottage cheese pancakes are a delicious and protein-packed twist on traditional pancakes, with a fluffy texture and slightly tangy flavor that will make them a new breakfast favorite.
Ingredients
- 4 large eggs
- 1 cup small curd cottage cheese
- 1/2 cup all-purpose flour
- 1 tablespoon granulated sugar
- 6 tablespoons unsalted butter (melted and cooled, plus more for cooking and serving)
- 1 teaspoon vanilla extract or lemon zest
- Warm maple syrup
Directions
- Break eggs into a medium bowl. Whisk to blend. Whisk in cottage cheese, flour, and sugar. Stir in melted butter and vanilla or lemon zest.
- Heat a large, non-stick griddle or skillet over medium heat. Add a pat of butter and swirl to coat bottom of pan. Pour 1/4 cup portions of batter into pan, allowing a little space between each pancake. Cook, turning once, until both sides of pancakes are golden.
- Serve immediately with butter and warm maple syrup.
Cook Tips
To keep pancakes warm while cooking remaining pancakes, place on a parchment-lined baking sheet and in a 200°F oven.
