Crispy Prosciutto Crostini

Serves 6

Ingredients

  • 3 tablespoons extra virgin olive oil (divided use)
  • 4 ounces prosciutto or speck (cut into thin strips)
  • 3 tablespoons thinly sliced basil or flat-leaf parsley leaves
  • 2 tablespoons aged balsamic vinegar
  • 8 ounces fresh, hand-stretched mozzarella (cut into 12 thin pieces)
  • 12 crostini
  • Flaky finishing salt (to taste)
  • Pepper (to taste)

Directions

  1. In a small skillet, heat 2 tablespoons olive oil over medium-high heat. Add prosciutto. Stir and cook until crispy. Remove pan from heat.
  2. Once pan has cooled, add basil, 1 tablespoon olive oil, and vinegar. Stir gently, and set aside.
  3. Just before serving, arrange mozzarella on crostini. Spoon prosciutto mixture over cheese. Sprinkle with finishing salt and pepper. Serve at room temperature.
