Crispy Prosciutto Crostini
Serves 6
Ingredients
- 3 tablespoons extra virgin olive oil (divided use)
- 4 ounces prosciutto or speck (cut into thin strips)
- 3 tablespoons thinly sliced basil or flat-leaf parsley leaves
- 2 tablespoons aged balsamic vinegar
- 8 ounces fresh, hand-stretched mozzarella (cut into 12 thin pieces)
- 12 crostini
- Flaky finishing salt (to taste)
- Pepper (to taste)
Directions
- In a small skillet, heat 2 tablespoons olive oil over medium-high heat. Add prosciutto. Stir and cook until crispy. Remove pan from heat.
- Once pan has cooled, add basil, 1 tablespoon olive oil, and vinegar. Stir gently, and set aside.
- Just before serving, arrange mozzarella on crostini. Spoon prosciutto mixture over cheese. Sprinkle with finishing salt and pepper. Serve at room temperature.
