Dijon Aioli
MAKES 1 CUP
Here's a recipe for making homemade garlic mayonnaise (aioli) with a little extra zip from Dijon mustard. Enjoy this creamy sauce on sandwiches, roasted veggies, and fried potatoes.
Ingredients
- 1 clove garlic
- 1/2 teaspoon kosher salt
- 1 large egg yolk
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/2 cup extra virgin olive oil
Directions
- Mince garlic. Sprinkle with 1/2 teaspoon salt. Smash with side of knife blade and continue chopping until it forms a paste.
- In a small bowl, combine garlic paste with egg yolk, mustard, and lemon juice.
- Very slowly add olive oil while constantly whisking. (see Cook's Tip) The desired result is a creamy, cohesive emulsion.
- Taste and adjust for seasoning.
- Cook's Tip
- To keep bowl from spinning, wrap base with a wet dish towel. This frees up your hands to drizzle oil and whisk simultaneously.
