Dijon Aioli

Dijon Aioli

MAKES 1 CUP
Here's a recipe for making homemade garlic mayonnaise (aioli) with a little extra zip from Dijon mustard. Enjoy this creamy sauce on sandwiches, roasted veggies, and fried potatoes.

Ingredients

  • 1 clove garlic
  • 1/2 teaspoon kosher salt
  • 1 large egg yolk
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup extra virgin olive oil

Directions

  1. Mince garlic. Sprinkle with 1/2 teaspoon salt. Smash with side of knife blade and continue chopping until it forms a paste.
  2. In a small bowl, combine garlic paste with egg yolk, mustard, and lemon juice.
  3. Very slowly add olive oil while constantly whisking. (see Cook's Tip) The desired result is a creamy, cohesive emulsion.
  4. Taste and adjust for seasoning.

  6. To keep bowl from spinning, wrap base with a wet dish towel. This frees up your hands to drizzle oil and whisk simultaneously.
