Flatbread with Sweet Onions, Goat Cheese, and Speck

Serve as is or top with arugula for freshness and bite.
Ingredients
- 2 tablespoons unsalted butter
- 2 sweet onions (thinly sliced)
- 4 flatbreads such as pita or naan
- 4 tablespoons extra virgin olive oil
- 4 ounces goat cheese
- 1/4 cup heavy whipping cream
- 8 slices speck or prosciutto
- 4 sprigs thyme (leaves picked)
- Kosher salt (to taste)
- Pepper (to taste)
Directions
- Preheat oven to 400°F.
- Heat butter in a large skillet over medium-low heat. Add onions and cook 15 to 20 minutes or until onions are very soft and golden brown. Cool slightly.
- Place flatbreads on large baking sheet. Brush with olive oil. In a small mixing bowl, beat together goat cheese and cream. Spread mixture over flatbreads. Top with caramelized onions and speck slices. Sprinkle with thyme, salt, and pepper.
- Bake 10 to 15 minutes or until cheese is bubbling and edges of bread are toasted.
- Cut into pieces. Serve warm.
