French Onion Ramen
Serves 4
Cheesy, rich, and decadent, this is pure comfort in a bowl. Sweet caramelized onions blend beautifully with ramen noodles. Top with cheese and fresh herbs for a satisfying and savory twist on a classic.
Ingredients
- 2 tablespoons unsalted butter
- 2 yellow onions (thinly sliced)
- 2 cloves garlic (minced)
- 1 cup dry red wine
- 4 (3 ounce) packages instant ramen noodles (beef flavor)
- 4 thyme sprigs (plus more for garnish)
- 1 cup Gruyère cheese (shredded)
- Pepper (to taste)
- Aged balsamic vinegar (to taste)
Directions
- Place 4 oven-safe bowls on a sheet pan and set aside.
- Heat butter in a large pot over medium heat. Add onions, cover pot with a lid, and cook until translucent, 2 to 3 minutes. Remove lid, increase heat to medium-high, and continue cooking, stirring occasionally, until onions are deeply caramelized. If the bottom of the pan becomes dark, periodically deglaze with a tablespoon or two of water.
- Add garlic and stir. Add red wine and cook until almost dry, scraping up and dissolving any brown bits from bottom of pot.
- Add 8 cups water, all 4 ramen seasoning packets, and 4 thyme sprigs. Increase heat to high and bring to boil.
- Add ramen noodles and cook 3 minutes or until noodles reach preferred doneness. Portion noodles and onions into the individual oven-safe bowls. Ladle in broth until barely covered.
- Top each bowl with shredded cheese. Transfer pan to oven. Brown under broiler until bubbly, about 2 to 3 minutes.
- Finish with additional thyme leaves, freshly cracked black pepper, and a drizzle of balsamic.
