Fruit Packets

Serves 4
These fruit packets are a fun way to serve dessert on a camping trip or at your next cookout. For added decadence, top with ice cream, cubes of pound cake, crumbled cookies, and/or candied nuts.

Ingredients

  • 2 pounds fruit (sliced stone fruits and berries)
  • 4 tablespoons butter
  • 1 cup miniature marshmallows

Optional Ingredients

  • 4 tablespoons brandy or fruit liqueur

Directions

  1. Preheat grill to medium-high or oven to 400°F.
  2. Cut 4 pieces of foil, each a 12-inch square.
  3. Put fruit in center of each square of foil, dividing it equally between the 4 squares. Top each with 1 tablespoon butter, cut up into small pieces. Sprinkle each with 1/4 cup marshmallows. Drizzle with brandy, if using. Bring up two opposite sides of one foil square and fold together over fruit. Repeat with other squares.
  4. Place packets on grill and cook until packets puff, fruit releases juices, and marshmallows melt, about 10 minutes. If baking in oven, place packets on baking sheets in case juices leak.
  5. Transfer hot packets to plates. Carefully open each packet and enjoy. The warm fruit pairs well with pound cake, ice cream, and crumbled cookies.
