Game Day Chili with Beef and Pork
Serves 6
You're going to love this classic meat and bean chili. It's savory, satisfying, and sure to be a crowd-pleaser during the big game or at any time of year. (Chili dog, anyone?)
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion (chopped (about 1 cup))
- 6 cloves garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1 pound ground beef
- 1 pound ground pork
- 1 (15 ounce) can tomato sauce
- 2 cups beef broth
- 2 (15 ounce) cans kidney beans (drained and rinsed)
Directions
- In a Dutch oven or heavy stock pot, warm olive oil over medium heat. Add onions and sauté until soft and translucent. Stir in garlic, chili powder, cumin, thyme, salt, and pepper.
- Add beef and pork. Stir, crumbling meat into small pieces. Cook until lightly browned. Stir in tomato sauce and broth. Simmer uncovered 30 minutes.
- Add rinsed beans and simmer another 15 minutes or until desired thickness is achieved. Adjust seasoning, to taste. Serve warm with your favorite toppings.
