Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, chopped (about 1 cup)
  • 6 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 pound ground beef

  • 1 (15 ounce) can tomato sauce
  • 2 cups beef broth
  • 2 (15 ounce) cans kidney beans, drained and rinsed

Directions

  1. In a Dutch oven or heavy stock pot, warm olive oil over medium heat. Add onions and sauté until soft and translucent. Stir in garlic, chili powder, cumin, thyme, salt, and pepper.
  2. Add beef and pork. Stir, crumbling meat into small pieces. Cook until lightly browned. Stir in tomato sauce and broth. Simmer uncovered 30 minutes.
  3. Add rinsed beans and simmer another 15 minutes or until desired thickness is achieved. Adjust seasoning, to taste. Serve warm with your favorite toppings.
