Grandma's Peach Pie
MAKES 1 (9-INCH) PIE
Grandma Dora knew that simple is best with juicy, in-season peaches. With a store-bought crust, you can prepare this pie in about 15 minutes before popping in the oven.
Ingredients
- 1 homemade or store-bought pie crust pastry (for single crust pie)
- 3 ripe peaches
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 3 tablespoons unsalted butter (softened)
Optional Ingredients
- Sweetened whipped cream or vanilla ice cream
Directions
- Preheat oven to 375°F.
- Fit pie dough into a 9-inch pie plate. Chill in refrigerator or freezer while continuing with next steps.
- Fill a large pot with water and bring to boil. Fill a large bowl with ice water and set aside. Place peaches in boiling water 15 seconds. Use a slotted spoon or mesh spider to immediately transfer peaches to ice water. Once cool, peel skins off and discard. Cut peaches in half and remove pits.
- Arrange peaches, cut-side down, in pie crust. (If peaches are very large, cut them into quarters.)
- In a medium bowl, whisk together sugar and flour. Rub butter into flour mixture with fingertips. Sprinkle mixture over and around peaches.
- Bake 25 to 35 minutes or until crust is light golden brown and peaches are tender when tested with a toothpick.
- Serve warm or at room temperature. Top with whipped cream or ice cream, as desired.
