Greek Beef Burgers

Greek Beef Burgers

Serves 4
Change things up once in awhile with a Mediterranean take on a classic burger.

Ingredients

  • 1/4 cup Greek-style yogurt
  • 1/2 cup olive tapenade (divided use)
  • 1 pound ground beef
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 4 whole-grain hamburger buns (split and toasted)
  • Fresh spinach leaves
  • 4 slices sweet onion (sautéed)
  • 1/4 cup crumbled feta cheese
  • 1 large zucchini (sliced into planks and lightly pan fried)

Directions

  1. In a small bowl, combine yogurt and 1/4 cup olive tapenade. Cover and refrigerate until ready to use.
  2. In a large bowl, combine ground beef and remaining 1/4 cup olive tapenade. Mix lightly, but thoroughly. Shape into four 1/2-inch thick patties.
  3. Heat grill pan over medium heat until hot. Place patties in pan. Cook, turning occasionally, 10 to 12 minutes or until a probe thermometer inserted horizontally into center registers 160°F. Season with salt and pepper, to taste.
  4. Lay spinach and onions on bottom of each bun. Top with 1 tablespoon feta crumbles, burger, and zucchni. Dollop 2 tablespoons yogurt mixture over zucchini and cover with bun tops.
