Grilled Artichokes with Lemon Caper Butter

Artichokes are a member of the thistle family and are stunning when charred on the grill. Their many crevasses are ideal for soaking up flavorful butter sauce seasoned with garlic, capers, and herbs. For more on artichokes, including how to eat, see How to Cook Artichokes
Ingredients
- 4 artichokes
- Kosher salt (to taste)
- 2 tablespoons extra virgin olive oil
- 1 lemon
- 8 tablespoons butter
- 3 cloves garlic (minced)
- 2 tablespoons capers (finely chopped)
- 8 sprigs flat-leaf parsley (leaves picked and chopped)
- Black pepper (to taste)
Directions
- Fill a large pot with water. Bring to boil, and season lightly with salt.
- Using a sharp, heavy knife, cut each artichoke in half. Use a spoon to scoop out the fibrous “choke” from the center, leaving stem and heart with the majority of leaves attached.
- Place artichoke halves into boiling water and simmer 20 to 30 minutes until knife tender.
- Remove artichoke halves and set on a plate, cut side down, to drain.
- Heat grill on high. Drizzle cut side of artichokes lightly with oil. Grill, cut side down, until charred and caramelized. Remove and set on a warm platter, cut side up. Squeeze lemon juice over artichokes.
- While artichokes are grilling, make sauce. Melt butter in a small saucepan. Add garlic and capers. Cook until garlic has softened. Stir in parsley and remove from heat.
- Season artichokes with salt and pepper, to taste. Spoon mixture over top. Serve immediately.
