Grilled Corned Beef and Irish Cheddar Sandwich
Serves 1
Corned beef is brisket that has been cured with "corns" of salt and a mix of spices. In this sandwich, it's paired with other ingredients of equally bold flavors.
Ingredients
- 2 slices rye or other firm bread (such as como or poilane)
- 1 tablespoon unsalted butter
- 2 teaspoons Dijon mustard
- 3 ounces corned beef (thinly sliced)
- 2 slices Irish cheddar cheese (about 2 ounces)
- 2 tablespoons sautéed or pickled onions
Directions
- Place bread slices on a cutting board. Spread butter on each slice. Flip bread over and spread mustard on the other side of each slice.
- Atop the mustard on one slice of bread, layer cheese, corned beef, onion, and more cheese. (The cheese, when it melts, helps to hold everything together.) Top with second slice of bread, mustard facing down.
- Carefully lay sandwich on preheated grill or a small, heavy skillet over medium heat. Using a flat spatula, press down on sandwich to increase surface contact with heat. Once bottom bread is toasted and cheese is melted, carefully flip sandwich and toast other side. Sandwich can also be made in a panini grill. Slice and enjoy immediately.
