Grilled Lamb Loin Chops

One of the most prized and flavorful cuts of lamb. With its fine texture and mild flavor, this cut cooks quickly and shines with simple seasoning. This recipe features a marinade made with a medley of aromatics and herbs that accentuate the loin chop’s flavor. Best served medium-rare for juicy, tender results.

Ingredients

  • 8 lamb loin chops

MARINADE

  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 bunch fresh flat-leaf parsley, leaves picked and chopped
  • 1/2 bunch fresh mint, leaves picked and chopped
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper

Directions

  1. Place lamb chops in a shallow dish or sealable bag. In a small bowl, whisk together marinade ingredients. Pour 3/4 cup marinade over lamb and coat thoroughly. Cover and refrigerate at least 1 hour and up to overnight. Set aside remaining marinade to serve later as sauce.
  2. Preheat grill to medium-high heat.
  3. Grill lamb to an internal temperature of 130°F for medium-rare (about 4 minutes per side) and 140°F for medium (about 6 minutes per side). Remove from heat and allow to rest 5 minutes.
  4. Spoon reserved marinade over lamb before serving.
