Grilled Lamb Loin Chops
Serves 4
Ingredients
- 8 lamb loin chops
MARINADE
- 4 cloves garlic (minced)
- 1 shallot (minced)
- 1/2 bunch fresh flat-leaf parsley (leaves picked and chopped)
- 1/2 bunch fresh mint (leaves picked and chopped)
- 1/2 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
- 1 teaspoon pepper
Directions
- Place lamb chops in a shallow dish or sealable bag. In a small bowl, whisk together marinade ingredients. Pour 3/4 cup marinade over lamb and coat thoroughly. Cover and refrigerate at least 1 hour and up to overnight. Set aside remaining marinade to serve later as sauce.
- Preheat grill to medium-high heat.
- Grill lamb to an internal temperature of 130°F for medium-rare (about 4 minutes per side) and 140°F for medium (about 6 minutes per side). Remove from heat and allow to rest 5 minutes.
- Spoon reserved marinade over lamb before serving.
