Halibut with Ginger Tomato Sauce

Serves 4
A quick and easy recipe that pairs mild halibut with a zippy sauce.

Ingredients

  • 4 halibut fillets (about 6 ounces each)
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 Roma tomatoes (seeded and diced)
  • 1/4 cup fresh lemon juice
  • 4 sprigs cilantro (finely chopped)
  • 1 tablespoon grated, peeled fresh ginger root
  • 3 cloves garlic (minced)

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Pat fish dry with paper towels. Season both sides with salt and pepper.
  3. Lay halibut in pan, skin-side up. Cook fillets 4 to 5 minutes on each side, until opaque throughout. Remove fish to warm serving platter. Cover and keep warm.
  4. Add butter, tomato, lemon juice, cilantro, ginger, and garlic to skillet. Simmer 1 minute. Add salt and pepper, to taste.
  5. Spoon sauce around halibut fillets and serve warm.
