Hatch Chile Guacamole

You can't go wrong with guacamole as a party starter! Hatch chiles, grown exclusively in the Hatch Valley of New Mexico, are known for their outstanding flavor and make a delicious addition to this classic guac.

Ingredients

  • 1/4 white onion (small diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh lime juice (plus more to taste)
  • 1 (4 ounce) can diced Hatch green chiles (drained)
  • 3 large ripe avocados
  • 1 Roma tomato (seeded and diced)
  • Kosher salt (to taste)
  • Tortilla chips (for serving)

Directions

  1. In a medium bowl, combine onion, garlic, and lime juice. Mix to coat.
  2. Stir in chiles and tomato.
  3. Halve avocados, remove pits, and scoop flesh into a bowl. Mash with a fork or potato masher. Mix to combine.
  4. Season with salt and additional lime juice, to taste.
  5. Serve with tortilla chips.

Cook Tips

Raw onions and garlic can have a harsh, sulfury taste. Start by squeezing lime juice over them so the acid in the juice will tame the flavor.

Guacamole will eventually turn brown from oxidization. Make ahead and keep your guac bright longer by placing a piece of plastic wrap directly against the surface until serving.
