How to Make an Omelet

As long as you've got a few eggs, you have the fixings for a simple, yet satisfying, omelet. Look in your fridge for filling inspiration - bits of cheese, cooked veggies, a little prosciutto or ham.

Ingredients

  • 2 large eggs
  • 1/8 teaspoon kosher salt
  • Dash of pepper
  • 1 teaspoon unsalted butter or oil
  • 1/3 cup filling (such as shredded cheese, chopped ham, smoked salmon, or sauteed veggies)

Directions

  1. In a small bowl, beat eggs with 2 tablespoons water, salt, and pepper.
  2. Heat an 8-inch, nonstick frying pan over medium-high heat. Once hot, add butter. Swirl and allow to bubble. Pour in egg mixture. Tilt and rotate pan to evenly distribute. Mixture should set immediately at edges. Gently push cooked edges toward center with heatproof spatula so that uncooked eggs can reach hot pan surface. Continue cooking, tilting pan and gently moving cooked portions until no visible liquid egg remains.
  3. Place filling on one side of omelet. Fold omelet in half to cover filling. Slide omelet onto plate. Serve warm.
