Mediterranean Beef and Romaine Pita

Serves 4
Think of this as an open-faced pita sandwich for serving with utensils rather than eating on the go—for those times you feel like being fancy!

Ingredients

  • 1 pound ground beef
  • 1 medium red bell pepper (chopped)
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 4 cups romaine lettuce (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/3 cup Italian dressing or other vinaigrette
  • 1/4 cup chopped pitted Kalamata olives (or olive tapanade)
  • 4 pitas (toasted)

Optional Ingredients

  • Chopped cucumber
  • Diced tomato

Directions

  1. Heat large nontstick skillet over medium heat until hot. Add ground beef and bell pepper. Cook 8 to 10 minutes, stirring occasionally and breaking meat into crumbles. Season with salt and pepper, to taste.
  2. Using a slotted spoon, remove beef and peppers from pan and place into large bowl. Add lettuce, cheese, dressing, and olives; toss to combine.
  3. Top toasted pitas with equal amounts beef salad mixture.
