Mediterranean Tuna Salad
Serves 4
Albacore tuna shines in this Mediterranean-style salad. Spoon it on toasted slices of your favorite rustic bread or serve on a bed of fresh greens.
Ingredients
- 1 (6 ounce) can albacore tuna
- 1 cup cooked white beans (such as cannellini) (drained and rinsed)
- 1 (15 ounce) can red beans (drained and rinsed)
- 1/2 pint cherry tomatoes (halved)
- 1/4 small red onion (thinly sliced)
- 1/3 cup pitted kalamata olives (sliced)
- 1 sprig flat-leaf parsley (leaves removed and chopped)
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic (minced)
- Kosher salt (to taste)
- Pepper (to taste)
Directions
- In a large bowl, combine tuna, beans, tomatoes, onion, olives, and parsley. Toss gently.
- In a small bowl, whisk together olive oil, vinegar, and garlic. Season with salt and pepper, to taste. Add to salad and toss again.
- Serve immediately or cover and chill to allow flavors to blend. Serve with slices of crusty bread.
