Molletes (Mexican Open-Faced Sandwiches)

Serves 4
This is a classic Mexican breakfast that's easy to make and will keep you fueled for the day ahead.

Ingredients

  • 1 French baguette
  • 1 (15 ounce) can refried black beans
  • 1 cup shredded mozzarella or jack cheese
  • 1 pint pico de gallo

Directions

  1. Divide bread into 4 equal sections crosswise. Slice each portion lengthwise. Set aside.
  2. Slather each cut side with beans and place on a sheet pan facing up. Sprinkle each piece of bread with cheese.
  3. Turn oven broiler on, place pan on rack four inches from the top, and cook until cheese is bubbly. Keep a close eye on it ? it will take only a couple minutes.
  4. Transfer bread to a platter and top with pico de gallo.

Cook Tips

Some people opt to pull out and discard some of the baguette interior so that the molletes are not too "bread-y." You may also toast the bread slightly before adding the beans for more crunch.
