Northwest BBQ Rub
MAKES 1 CUP
By combining classic flavors of the Pacific Northwest, we've developed a unique take on barbeque. This rub is herby, woodsy, and savory. Try it on pork ribs and serve with our Northwest BBQ Relish. It's sure to become your new, summer cookout favorite!
Ingredients
- 1/2 cup (0.5 ounce) dried wild mushrooms, such as porcinis, chanterelles, or morels
- 2 tablespoons fennel seeds
- 1 tablespoon black peppercorns
- 2 tablespoons dried rosemary
- 2 tablespoons dried thyme
- 3 tablespoons garlic granules
- 3 tablespoons onion powder
- 3 tablespoons Alderwood smoked sea salt
Directions
- Grind up mushrooms, fennel seeds, and black pepper in spice grinder until a smooth powder.
- Add rosemary and thyme to grinder. Pulse a few times to break up the larger pieces.
- Transfer to a bowl. Add remaining ingredients. Whisk everything together until evenly combined, being sure to break up any clumps.
- Store in an airtight container up to 3 months.
