Pa Amb Tomàquet (Catalan Tomato Toast)

A humble, but popular appetizer ubiquitous on tapas menus found throughout Spain. The key to this simple dish is to use the best, freshest ingredients you can find.
Ingredients
- 12 slices baguette or other rustic bread (sliced about 1/3-inch thick)
- Spanish extra virgin olive oil (such as Merula or Castillo de Canena)
- 3 cloves garlic (cut in half crosswise)
- 3 very ripe tomatoes
- Kosher salt (to taste)
Optional Ingredients
- 12 thin slices Jamón Serrano or Ibérico (Spanish ham)
Directions
- Preheat oven to 375°F.
- Place bread slices on a baking sheet. Brush tops with olive oil. Bake 5 to 10 minutes, until warm and lightly toasted.
- Remove bread from oven and rub cut side of garlic cloves on each piece of toast.
- Cut tomatoes in half and rub the pulp and seeds of the cut side into bread. Alternatively, you can grate the cut side of the tomatoes on the large holes of a box grater into a bowl. Then spread pulp over bread.
- Drizzle with more olive oil and sprinkle with salt. If desired, top each with a slice of Spanish ham.
