Pan-Fried New York Beef Steak with Garlic and Herbs

Serves 2
All you need is a cast iron skillet (or similarly heavy pan) to prepare a restaurant-worthy steak dinner at home.

Ingredients

  • 16 ounces New York Strip or Ribeye steak
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 1 tablespoon vegetable oil
  • 5 sprigs fresh thyme
  • 5 cloves roasted garlic or 3 large garlic cloves (lightly crushed)
  • 2 tablespoons unsalted butter

Directions

  1. Pat steak dry with paper towels. Season generously on both sides with salt and pepper.
  2. Heat a large skillet, preferably cast iron, over medium-high heat. Once hot, add oil. Lay steak in pan and press down to ensure good contact. Sear until a brown crust forms on steak, about 5 minutes.
  3. Reduce heat to medium and flip steak over. Add herb sprigs and garlic to pan. Cook 3 minutes, until steak is well browned. Add butter and cook another 2 minutes while tilting pan so melted butter pools. Continually spoon melted butter over steak as it finishes cooking. The time given is for medium-rare; increase time if a more well-done steak is desired.
  4. Transfer steak to cutting board and rest 6 to 8 minutes. Slice steak and divide between two plates. Drizzle with herb butter from pan.
