Pan-Seared Halibut with Spring Veggies and White Wine Sauce

Halibut skin is not usually eaten due to its toughness, but leaving it on ensures ease of cooking and avoids the risk of tearing the fish. Serve this veggie-adorned entrée with new potatoes for a simple and elegant springtime meal.
Ingredients
- 2 halibut fillets (6 ounces each)
- kosher sale, to taste
- pepper, to taste
- 1 tablespoon high-heat oil
- 1 leek, white and light green parts only, sliced 1/2 inch thick
- 1 large carrot, diced 1/4 inch (about 1/4 cup)
- 1/2 cup white wine
- 1 tablespoon unsalted butter
- zest and juice of 1 lemon
- 1/2 cup microgreens
Directions
- Pat the halibut dry with paper towels. Season both sides with salt and pepper.
- Preheat a heavy-bottomed or cast-iron skillet over high heat. Once the pan just begins to smoke, add oil.
- Carefully lay the fish in the pan, skin-side down. Apply gentle pressure to the fillets, helping the skin make full contact with the pan. Cook 3 to 4 minutes, browning the skin until it begins to lift from the pan. Reduce heat to low. Cover and cook 3 to 4 minutes more, or until the halibut is opaque and reaches an internal temperature of 130°F. Transfer the fish to warm plates, cover lightly with foil, and set aside.
- Add leeks to pan. If the pan is dry, add a little more oil. Cook 1 to 2 minutes over medium-high heat until golden. Turn and cook until golden on the other side. Divide between serving plates.
- Add carrots to the pan and cook one minute, stirring occasionally. Add wine. Simmer until the wine is reduced by half and carrots are tender, about 2 to 3 minutes. Remove the pan from heat. Stir in butter until melted. Season with salt and pepper, to taste. Spoon the sauce and sautéed carrots over the fish.
- Zest the lemon and toss the zest with the microgreens. Squeeze lemon juice over the halibut. Top the fillets with microgreens and zest mixture. Serve immediately.
