Peach Crostini

Summer peaches, tomatoes, and basil team up for a sensational no-sweat appetizer everyone will love.
Ingredients
- 1 cup ripe peaches (medium diced)
- 1 cup ripe tomatoes (seeded and medium diced)
- 1/2 cup red onion (finely diced)
- 2 sprigs basil (leaves removed and finely sliced)
- 1 tablespoon aged balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Kosher salt (to taste)
- Pepper (to taste)
- 12 crostini
Directions
- In a large bowl, gently toss together everything but the crostini. (If you want to make it an hour or two ahead, add salt and pepper just before serving. Cover and chill.)
- Top each crostini with a generous spoonful of peach mixture. Arrange on a platter to serve.
