Peach Crostini

Summer peaches, tomatoes, and basil team up for a sensational no-sweat appetizer everyone will love.

Ingredients

  • 1 cup ripe peaches (medium diced)
  • 1 cup ripe tomatoes (seeded and medium diced)
  • 1/2 cup red onion (finely diced)
  • 2 sprigs basil (leaves removed and finely sliced)
  • 1 tablespoon aged balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 12 crostini

Directions

  1. In a large bowl, gently toss together everything but the crostini. (If you want to make it an hour or two ahead, add salt and pepper just before serving. Cover and chill.)
  2. Top each crostini with a generous spoonful of peach mixture. Arrange on a platter to serve.
