Peach Horchata Pudding Popsicles

MAKES 10 TO 12 POPSICLES

Ingredients

  • 2 cups rice pudding (store-bought)
  • 1/2 cup half-and-half
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 2 peaches (pits removed, thinly sliced)

Directions

  1. Place rice pudding, half-and-half, honey, cinnamon, and salt in a blender. Puree until smooth.
  2. Place 2 to 3 slices of peaches into each popsicle mold.
  3. Fill molds with pudding mixture.
  4. Insert sticks and freeze until firm, about 6 to 8 hours.
