These delicious waffles aren't just warm and comforting on a chilly morning—the addition of protein powder makes them a nutrient-dense fuel to start the day.

Ingredients

  • 1 1/2 cup buckwheat flour
  • 1/2 cup organic, plant-based protein powder
  • 1 tablespoon baking powder
  • 3 large eggs
  • 1 tablespoon vegetable oil
  • 1 cup oat milk
  • 1 teaspoon vanilla extract

Optional Ingredients

  • slice d banana
  • dark chocolate chips
  • chopped nuts

Directions

  1. Preheat waffle iron according to manufacturer's instructions.
  2. In a medium bowl, whisk together dry ingredients. In a large liquid measuring cup, whisk together wet ingredients plus 3/4 cup water.
  3. Add wet mixture to dry ingredients and stir until just combined.
  4. Cook waffles according to instructions for your waffle iron. Serve warm with toppings, as desired.
