Quick Pickled Shrimp
Serves 8
This is the perfect make-ahead appetizer. It's quick, easy, and delicious - and it will be ready to serve as soon as your guests arrive.
Ingredients
- 1 cup white wine vinegar
- 1 cup extra virgin olive oil
- 2 teaspoons kosher salt
- 2 small shallots (sliced)
- 10 cloves garlic (thinly sliced)
- 1 tablespoon whole coriander seeds (see cook's tip)
- 3 tablespoons chopped fresh dill
- 1 pound cooked shrimp (31/35 count) (peeled and deveined)
- 1/2 cup chopped fresh flat-leaf parsley leaves
Directions
- In a large bowl, whisk together vinegar, olive oil, and salt.
- Add shallot, garlic, coriander, dill, and shrimp. Toss gently to combine.
- Cover and refrigerate at least 1 hour and up to 24 hours.
- To serve, plate shrimp and sprinkle with chopped parsley.
Cook Tips
For more flavor, crack coriander seeds with a mortar and pestle or with the back of a spoon.
