Red Guac (Tomato and Chipotle Guacamole)
Serves 6
Spicy, smoky chipotle meets creamy, rich avocados. Gently swirling the red sauce into the guac helps the avocado stay bright while creating spicy pockets of chipotle sauce throughout.
Ingredients
- 1/4 red onion (small diced)
- 2 tablespoons lime juice
- 2 tablespoons chipotle in adobo (minced, plus more to taste)
- 2 tablespoons tomato paste
- 1 medium ripe tomato (diced)
- 3 large ripe avocados
- 1/2 bunch cilantro (chopped)
- Kosher salt (to taste)
- Tortilla chips (for serving)
Directions
- In a small bowl, combine red onion and lime juice. Mix to coat.
- Add chipotle, tomato paste, and diced tomato. Mix to create red sauce; set aside.
- Halve avocados, remove pits, and scoop flesh into a large bowl. Mash with a fork or potato masher.
- Stir in cilantro and season with salt, to taste.
- Swirl in red sauce and serve with tortilla chips.
Cook Tips
Raw onions can have a harsh, sulfury taste. We start by squeezing lime juice over the onion so the acid in the juice will remove it.
Guacamole will eventually turn brown from oxidization. Make ahead and keep your guac bright longer by placing a piece of plastic wrap directly against the surface until serving.
