Roasted Amaretto Peaches

Peaches, ginger snaps, and amaretto—what's not to love? In this easy recipe, we dollop fluffy amaretto-scented meringue into juicy peach halves before roasting to perfection.
Ingredients
- 4 ripe peaches (halved and pits removed)
- 4 tablespoons ginger snap cookie crumbs (from 4 cookies)
- 1/4 cup finely chopped blanched almonds
- 2 tablespoons Amaretto liqueur
- 1 egg white
- 2 tablespoons granulated sugar
Optional Ingredients
- Vanilla ice cream or sweetened whipped cream
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Scoop out about 1 teaspoon flesh from center of each peach half to make a small cavity for the filling. Chop scooped out flesh and place in small bowl. Add cookie crumbs, almonds, and liqueur. Mix well and set aside.
- Place peach halves cut-side up on prepared baking sheet.
- Add egg white to a dry, clean, medium-sized bowl. Whisk until foamy. Sprinkle in sugar and continue to whisk until stiff peaks form.
- Gently fold cookie crumb mixture into egg whites. Spoon filling into cavities of each peach half.
- Bake 20 minutes or until topping is puffed and golden.
- Transfer to dessert plates and serve immediately. Accompany with ice cream or whipped cream, if desired.
Cook Tips
To make cookie crumbs, whirl in a food processor or seal cookies in a plastic bag and crush with a meat mallet or rolling pin.
