Roasted Asparagus with Prosciutto
Serves 6
Wrap prosciutto around asparagus spears and oven-roast for a special appetizer or vegetable side dish.
Ingredients
- 18 asparagus spears (trimmed (see Cook's Tip))
- 2 tablespoons extra virgin olive oil
- Kosher salt (to taste)
- Pepper (to taste)
- 18 slices prosciutto
- 1/2 cup grated parmesan cheese
Directions
- Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
- Wrap a slice of prosciutto around each asparagus spear.
- Roast 10 minutes or until asparagus is just tender.
- Sprinkle with parmesan. Return to oven for 1 minute, just until cheese melts.
Cook Tips
To trim asparagus, hold opposite ends of each spear and bend until tough end breaks off. Discard tough parts.
