
Roasted Delicata Squash with Black Garlic and Miso
Serves 2
Ingredients
- 4 cloves black garlic
- 2 tablespoons extra virgin olive oil
- 1 tablespoon miso paste
- 1/2 tablespoon honey
- Kosher salt (to taste)
- Pinch of cayenne pepper
- 1 delicata squash (about 1 pound) (seeded and cut into 3/4-inch slices)
- 1 red onion (sliced)
Optional Ingredients
- Chopped fresh cilantro
Directions
- Preheat oven to 400°F. Line a large sheet pan with parchment paper.
- In a medium bowl, mash black garlic with back of a fork to form a paste. Stir in olive oil, miso, honey, salt, and a pinch of cayenne pepper. Add squash and onion. Toss to coat.
- Spread squash mixture on prepared sheet pan. Roast 20 minutes or until tender and caramelized.
- Serve warm. Sprinkle with cilantro, if desired.
