Rustic Tomato Salsa
MAKES ABOUT 4 CUPS
Chunky, sun-ripe, Italian tomatoes combine with Mexican flavors for a sweet, fresh-tasting salsa.
Ingredients
- 1 (28 ounce) can diced tomatoes, with juice
- 1/2 cup finely chopped white onion
- 1/2 cup chopped cilantro
- 3 tablespoons fresh lime juice
- 1 tablespoon finely chopped jalapeño pepper ((1/2 jalapeandntilde;o))
- 3/4 teaspoon kosher salt
- 1/4 teaspoon pepper
Directions
- In a medium, non-reactive bowl, stir together all ingredients.
- Set aside 30 minutes to allow flavors to blend.
- Taste and adjust seasoning, to preference. Keeps for up to a week, covered in the refrigerator.
