Rustic Tomato Salsa

MAKES ABOUT 4 CUPS
Chunky, sun-ripe, Italian tomatoes combine with Mexican flavors for a sweet, fresh-tasting salsa.

Ingredients

  • 1 (28 ounce) can diced tomatoes, with juice
  • 1/2 cup finely chopped white onion
  • 1/2 cup chopped cilantro
  • 3 tablespoons fresh lime juice
  • 1 tablespoon finely chopped jalapeño pepper ((1/2 jalapeandntilde;o))
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon pepper

Directions

  1. In a medium, non-reactive bowl, stir together all ingredients.
  2. Set aside 30 minutes to allow flavors to blend.
  3. Taste and adjust seasoning, to preference. Keeps for up to a week, covered in the refrigerator.
