Salmon and Scramble Tartine (Toast)

Poilane bread is handcrafted in France using stone-ground wheat, natural fermentation, and wood-fired ovens that produce unparalleled flavor. The texture of the bread lends itself to a variety of hearty toppings, making it excellent for a tartine or simple "loaded" toast.

Ingredients

  • 1 slice Poilane or other artisan bread
  • 3 teaspoons unsalted butter (divided use)
  • 1 large egg (lightly beaten)
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 2 tablespoons flaked smoked salmon
  • 1 tablespoon crumbled goat cheese
  • 1 teaspoon chopped chives

Directions

  1. Toast bread. Spread 1 teaspoon butter on one side.
  2. While bread toasts, preheat a small, nonstick skillet over medium heat. Add remaining butter to pan. Add beaten egg and salt and pepper, to taste. Cook, stirring, to softly scramble. Remove from heat.
  3. Spread scrambled egg on toast. Top with salmon, goat cheese, and chives.
