Red and green confetti cookies with fun mix-ins will be a holiday hit.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter (at room temperature)
  • 3/4 cup granulated sugar
  • 1 large egg (at room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/4 cup peppermint chocolate, roughly chopped
  • 1/4 cup pretzels, roughly chopped
  • 2 tablespoons Christmas sprinkles

Directions

  1. In a small mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  2. In a large mixing bowl, beat butter and sugar on medium speed until light and creamy. On low speed, mix in egg and vanilla.
  3. With a wooden spoon, slowly stir dry ingredients into wet ingredients, mixing just until combined.
  4. Stir in white chocolate chips, peppermint chocolate, pretzels, and sprinkles. Cover dough and refrigerate at least one hour.
  5. When ready to bake, adjust oven rack to middle position. Preheat oven to 350°F. Line baking sheets with parchment paper.
  6. Roll 2-tablespoon portions of chilled dough into balls. Place on lined baking sheets about 1 1/2 inches apart. Press down lightly on each ball to flatten slightly.
  7. Bake, one sheet at a time, 10 to 12 minutes, or until bottoms start to brown. Transfer cookies to a rack and cool at least 5 minutes.
