Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted butter (at room temperature)
- 3/4 cup granulated sugar
- 1 large egg (at room temperature)
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips
- 1/4 cup peppermint chocolate, roughly chopped
- 1/4 cup pretzels, roughly chopped
- 2 tablespoons Christmas sprinkles
Directions
- In a small mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar on medium speed until light and creamy. On low speed, mix in egg and vanilla.
- With a wooden spoon, slowly stir dry ingredients into wet ingredients, mixing just until combined.
- Stir in white chocolate chips, peppermint chocolate, pretzels, and sprinkles. Cover dough and refrigerate at least one hour.
- When ready to bake, adjust oven rack to middle position. Preheat oven to 350°F. Line baking sheets with parchment paper.
- Roll 2-tablespoon portions of chilled dough into balls. Place on lined baking sheets about 1 1/2 inches apart. Press down lightly on each ball to flatten slightly.
- Bake, one sheet at a time, 10 to 12 minutes, or until bottoms start to brown. Transfer cookies to a rack and cool at least 5 minutes.
