Savory Roasted Kale Topping

If you're familiar with the dried seaweed seasoning, furikake, this is a similar addicting accompaniment to just about everything! Sprinkle it on rice, salads, soups, and popcorn or keep the pieces larger just for snacking as is.

Ingredients

  • 1/4 cup nutritional yeast
  • 1 tablespoon untoasted sesame seeds
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic granules
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper (to taste)
  • 2 bunches curly kale (stems removed and torn into 2-inch pieces )
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon toasted sesame oil

Directions

  1. Preheat oven to 325°F. Line a sheet pan with parchment paper.
  2. In a small bowl, combine nutritional yeast, sesame seeds, onion powder, garlic granules, salt, and pepper. Mix to combine and set aside.
  3. Make sure kale is very dry before beginning. Place kale in large bowl. Drizzle with olive oil. Massage oil into kale until evenly coated.
  4. Sprinkle seasoning mix over kale pieces. Toss to combine.
  5. Arrange in a single layer on prepared sheet pan. Roast about 30 minutes until completely dry and crisp, stirring once or twice to ensure even cooking.
  6. Drizzle with sesame oil and toss. May be crumbled further or left as is. Store in an airtight container.
