Shakshuka Farro with Chickpeas

Shakshuka sauce adds rich, intriguing flavor to cooked farro and chickpeas. Serve warm as a meat-free main or as a side dish.

Ingredients

  • 2 cups dry farro
  • 2 (15 ounce) cans chickpeas (well-drained)
  • 1 (24 ounce) jar shakshuka sauce
  • Toasted pine nuts or walnuts
  • 2 tablespoons chopped flat-leaf parsley leaves

Optional Ingredients

  • Black olives
  • Feta cheese

Directions

  1. Cook farro in lightly salted water as package directs. Drain well.
  2. Heat shakshuka sauce on stove or in microwave. Stir farro and chickpeas into warm sauce.
  3. To serve, sprinkle with nuts and herbs. Top with olives and feta, if desired. Serve warm.
