Skillet Chicken Nachos
Serves 6
Ingredients
- 8 ounces tortilla chips
- 1 cup shredded rotisserie chicken
- 1/2 cup canned black beans (drained, rinsed, and patted dry)
- 1 1/2 cup shredded cheddar cheese (about 6 ounces)
- 1 Roma tomato (seeded and diced)
- 3 green onions (thinly sliced)
- 1 jalapeño pepper (thinly sliced, or 1/4 cup diced red bell pepper)
Optional Ingredients
- Diced avocado
- Chopped cilantro
- Prepared salsa
- Mexican crema or sour cream
- slice d pickled jalapeños
- Lime wedges
Directions
- Preheat oven to 425°F.
- Spread tortilla chips in cast iron skillet or on a sheet pan lined with parchment paper. Sprinkle with chicken, followed by beans, cheese, tomatoes, green onion, and jalapeño.
- Bake 4 to 5 minutes, just until cheese melts.
- Add optional toppings, if you like. Serve warm.
