Smoked Tomato Bruschetta

Smoked Tomato Bruschetta

Serves 4
Savory-sweet smoked tomatoes and creamy goat cheese pair beautifully on slices of grilled baguette.

Ingredients

  • 1 cup wood chips (soaked)
  • 4 Roma tomatoes
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons sherry vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 8 slices baguette (1/2-inch thick)
  • 8 ounces goat cheese
  • Flaky finishing salt
  • 2 tablespoons chopped chives

Directions

  1. Place wood chips in the center of a sheet of aluminum foil. Fold up edges to create a rim and keep wood chips from falling out. Place directly over low heat on one side of grill.
  2. Slice tomatoes in half lengthwise. In a small bowl, whisk oil and vinegar together. Brush onto both sides of tomatoes. Sprinkle generously with salt and pepper.
  3. By now, the wood chips should be smoking. Turn the other side of the grill up to medium heat. Once hot, place tomatoes cut side down. Cook 2 minutes with grill lid closed. Flip tomatoes and cook an additional 2 minutes. Remove from grill and set aside to cool.
  4. Grill baguette slices until lightly toasted. Flip and grill second side.
  5. Once cool, chop tomatoes into 1/2-inch pieces. Spread 1 tablespoon goat cheese on each piece of toast. Top with a spoonful of smoked tomatoes. Sprinkle with flaky salt and chopped chives.
