Soy-Ginger Beef with Mushrooms
Serves 4
This makes for an easy weeknight dinner full of umami flavor.
Ingredients
- 1 pound top sirloin or flank steak
- 2 tablespoons cornstarch
- 1 tablespoon soy sauce
- 1 tablespoon grated, peeled fresh ginger root
- 3 tablespoons peanut or other high-heat oil (divided use)
- 1/2 pound cremini mushrooms (sliced)
- 3 cloves garlic (minced)
- Pepper (to taste)
- STIR-FRY SAUCE:
- 2 tablespoons cornstarch
- 3 tablespoons oyster sauce
- 2 tablespoons dry sherry
- 1 tablespoon toasted sesame oil
Optional Ingredients
- Thinly sliced green onions
- Cooked rice
Directions
- Slice beef across the grain into 1/4-inch strips. In a small bowl, mix cornstarch with soy sauce, ginger, and 1 tablespoon oil. Add beef strips and toss to coat. Marinate 20 minutes.
- Make stir-fry sauce: In a small bowl, stir 3 tablespoons cold water into 2 tablespoons cornstarch. Add oyster sauce, sherry, and sesame oil. Whisk to combine. Set aside.
- Heat a wok or large skillet over medium-high heat. Add 1 tablespoon oil. Stir-fry beef 1 minute. Remove to a plate and set aside.
- Return wok to stove over medium-high heat. Add 1 tablespoon oil. Add mushrooms and garlic. Stir-fry 2 minutes. Return beef to wok and add stir-fry sauce. Stir until sauce comes to a simmer and thickens, 30 seconds to 1 minute.
- Season with pepper. Garnish with green onions and serve with cooked rice, if desired.
