Spicy Kimchee Broth

Spicy Kimchee Broth

Serves 4
This is a spicy, warm, satisfying broth for cold nights.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 bunch green onions (sliced (about 1 cup))
  • 5 cloves garlic (peeled and sliced)
  • 1 tablespoon grated, peeled fresh ginger root
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (korean chili paste)
  • 1/2 cup kimchee liquid
  • Toasted sesame oil
  • Kimchee (drained and chopped)

Directions

  1. In a large saucepan, heat oil over medium heat. Add green onions, garlic, and ginger and cook until onion is soft. Add 4 cups water, soy sauce, and gochujang. Bring to a boil; then, reduce heat and simmer gently 2 minutes.
  2. If desired, strain through a fine-meshed strainer, discarding solids and reserving broth. Add kimchee liquid. Reheat gently if needed, but do not boil.
  3. To serve, add a splash of sesame oil, chopped kimchee, and more soy sauce or gochujang, as you like. For increased heartiness, add rice and/or tofu.
